If you've been an ECline Eats follower for awhile, you understand the importance of bowl recipes in my everyday life. I truly believe that a good bowl is the key to saving time, meal prepping, and having a quick meal on the go.

I wanted to make a simple street corn-inspired bowl, so I mixed sweet corn with cottage cheese, feta, jalapeño, and cilantro, then topped it with seasoned shrimp. The cottage cheese makes the corn mixture creamy without overpowering the other flavors, and the jalapeño gives it a nice little kick.

It’s a really simple combination, but the flavors work so well together.

Ingredients

  • 1 lb raw shrimp

  • 1 can corn

  • 1/4 cup cottage cheese

  • 1 jalapeño

  • 1/4 cup cilantro

  • 1/4 cup feta

  • paprika

  • garlic powder

  • salt & pepper

Instructions

  1. Cook corn on the stove top at high heat for 8-10 minutes,

  2. Add shrimp to a bowl and mix with 1/4 tsp paprika, garlic powder, salt, pepper, and 2 tbsp olive oil

  3. Cook shrimp on medium heat for 2 min per side.

  4. Grab your corn, cottage cheese, feta, cilantro, chopped jalapeño and mix along with 1/4 tsp salt and paprika - now you have street corn!

  5. Prepare your rice and assemble your bowls / highly recommend adding another spoonful of cottage cheese on top.
