Easy Lazy Stuffed Peppers
Updated: Sep 8
I love a good stuffed pepper, but sometimes I don’t feel like doing all the steps that usually come with them. So, these are my lazy version.
They’re made with just a few simple ingredients: ground beef, diced tomatoes, taco seasoning, and mozzarella, all tucked into sweet peppers and baked until the cheese is melted and bubbly. I like to finish them with avocado, cilantro, and a squeeze of lime for some freshness.
Nothing complicated, just an easy dinner that comes together without a lot of effort.

Ingredients
6 peppers
1 lb ground beef of choice
1 can of diced tomatoes
1 packet of mild taco seasoning
mozzarella
avocado, cilantro, and lime for garnish
Instructions
Preheat your oven to 400F and bake peppers for 15 min face up drizzled with olive oil and salt +
pepper.
Cook your ground beef until browned.
Add taco seasoning and a splash of water. Stir for 30–60 seconds so the spices coat the meat.
Add your diced tomatoes and simmer for a few minutes.
Stuff your peppers and add cheese on top.
Bake for another 5-7 minutes or until cheese is melted.
Top with garnishes of choice! I love plain greek yogurt, avocado, cilantro, and lime.
